When you talk on the phone the screen is suppose to go black when it touches your face. This is done to prevent exactly what you say is happening from happening.
Try making a phone call, pull the phone away from your face and put a finger up to the phone. See if the screen doesn't turn black.
Also if you're running Screebl make sure you don't have the phone set to stay on during a call.

i have this problem sometimes too. Very annoying along with the phone muting all the time for no reason.

Regardless, if you hold the phone closer to your mouth and make sure the screen remains black during the call, this shouldn't happen.
It happens to me on occasion as well when switching ears. Essentially, if you pull the phone away from you face and the screen comes on and then put it back against your face and your cheek bone hits the end call button - bye, bye....
There have been quite a few threads about this and apparently a lot of people having problems with their screen not going black while they are on a call. To my knowledge, no one really knows why this sometimes happens or any sure fire fix. For me personally, I can hold my phone to either ear, jog and talk, even hold the phone a good 2 inches away from my ear/face and the screen stays black the whole time. If your screen isn't staying dark during calls (and especially you don't have long hair, which seems to be a somewhat common thread amongst many of the people having this problem) you might want to consider taking it in and seeing about getting it replaced.
Also, do you have a case on your phone? I've heard of some cases messing with the sensor that controls the screen going dark/waking up.
