this is not happening to people using stock music app on non rooted phones. I can't figure it out for the life of me.
does this occur when you guys plug in your headset?

Try downloading the free app Autostarts... it lets you disable any automatic app launches...

This works fine for me since I dont use the Music app anyway. Get Titanium Backup Pro and Freeze the Music app. It won't open at all and will be removed from your app drawer until you unfreeze it.
This autostarting was a problem for me on the unrooted stock rom as well as since I've rooted. My guess is that it's hardware related.
removed the stock music app and got winamp... now winamp is doing the same annoying thing.

Until this bug is fixed, you can try Headset Blocker from the market. Many are reporting that it fixes this and other problems.

wonder what type of bug this is because stock non rooted devices do not seem to be having this problem.

I am using a non rooted phone with stock music app and I was having this problem too. Installing the headphone blocker appears to have fixed this issue, while at the same time isnt interfearing with the way Pandora, or Tasker detects headphones being unplugged.
