I think a list of what can and cannot or shouldn't be frozen would help out a lot of people.
The obvious junk, preinstalled games, vzw navigator, etc.
But what about htc's crap? Like "peep",, watch, etc.

I've disabled about a dozen apps so far. Some Verizon apps and some HTC apps. Unfortunately some Verizon apps couldn't be disabled. Go figure right. Anyway phone seems stable and smooth.
so far I've disabled

Hot Pursuit
Let's Golf
NFL Mobile
VCast Music
Verizon Video
VZ Navigator
No issues so far
Redwood, how did you disable VZ Nav? There wasn't a disable button.
Also seem to be completely safe so far:
Any Live Wallpaper you don't use
Apps (With the gray circle, shopping cart and red V circle)
VideoSurf
Amazon Kindle
Facebook (assuming you don't use it)
Google Play Books
Google+
Mobile IM
Mobile Instant Messaging
Polaris Office
Slacker Radio
Talk
Youtube
Probably more, but these are the ones I know can be disabled with no issues, provided you don't use them.
Interesting that you can't disable Visual Voice Mail...
You can disable stocks, talkBack, videosurf, watch and watch widget too...oh, and mobile IM....and FB chat. I use Kindle and Google+ so want those. Yes, you cannot disable visual VM?
