Currently I am using the latest BB version and I had a question if I wanted to try out another one would I lose my themes and apps?
can anybody shine some light on this for me?
You would only lose your themes. The apps would stay because they are synced with your google account. But you want to make sure you back up your current rom before doing anything else. Also don't forgot to wipe.

I have yet to try a custom rom, but I had a quick question. Just curious, but what would happen if you didn't wipe before you install the new rom?

I typically wipe prior to flashing a new ROM, but this last time I went from ChevyNo1's Simply Stunning v4.5 (which is a GREAT ROM BTW) to the ROM listed in my signature without wiping and had no issues. Which was great because I saved a lot of time not needing to restore apps and set up emails again, etc.
If you want to try and flash a new ROM without flashing, just be sure you have a current backup of your existing ROM. And if things don't act right make sure you wipe and reinstall before logging complaints with the dev of the ROM.
