Use SMUpdater, choose "Stock 2.0.1 (no root)" at the ROM choices, and let it do its magic!
To remove boot animations, remove /data/local/bootanimation.zip
(NOTE: This does not wipe /data, so your settings will remain in tact)

Am I the only one who doesn't want to go back to stock? I mean, I put all this time into getting my phone with 2.1 apps, (I don't use the sholes rom, btw), sprecovery, wifi tethering, etc, etc. Why abandon all that just for 2.1? Isn't that the point to being rooted? Once the 2.1 is out, then I'll be able to apply the 2.1 update when I want.

No you're not, but there are a lot who do (in case they need to return the phone for some reason, or another).

how long would it take to root 2.1 update that you could just apply as update.zip that wont lose root? like the 2.0.1 thats on here now. just was a curious thought i had.

It can be rooted the same way that you rooted it the first time.

Just to make sure, does this also remove sprecovery and unblock OTA updates? I know it says "completely back to stock" but I did not see those things mentioned.
