Just drag and drop the new icon to the dock. I don't believe you can change the app drawer icon. Could be wrong.

To add an app to the dock, add it to one of your homescreens, then long press the icon, and drag it to the dock at the bottom. Drag it on top of an existing one and it will replace that one. You can also remove apps from the dock by long pressing the one you want to remove, and draging it to the right to delete it (or up onto your homescreen). Apps is the only one that can't be removed/changed.

You can change the apps which appear on the lock screen as well. Those are done through Settings -> Security.
