If I take the battery and SD card out of my current phone, put them in the replacement, cut over VZW service, and set up the replacement as I desire, can I then go back to my original phone, before I send it back to VZW and wipe it?

Ummm, Yes he can. You do not need to be "logged in" to your Google account in order to do a Data/Factory Reset on the phone. I just did this myself when moving from my original phone to a CLNR phone. I activated the CLNR phone, which deactivated my original...then I spent the next few days reversing some of the mods I had done to my original phone.
