You can use a ton more apps, flash themes to customize your phone and more. I definitely recommend root.

Roms can be fun actually. Can make your phone look the way you want it to look. Roms can save battery life the devs take out the crap you really don't need.

I personally can't fathom how anyone could say unrooted is better than rooted. Unless all you want is a phone that makes calls, text, and email. Only real way to find out is go a week or two rooted, sbf back to froyo, see if you can get the OTA, and try that for a couple of weeks. See which one you prefer.
Well there are alot android users out there that don't even know what root is. When I rooted I found oud out that its a bit more maintenance cuz we are in control of are systems. Some ain't willing to go through the extra work. Some just want a phone that works. Me personally as long as there is an sbf for what ever device I get I'm gonna root it!

I couldn't care less about themes or alternate ROMs. I rooted because I wanted access to the command line, wanted to install an app to take screenshots, and wanted to over/under clock.
Having access to the command line lets me cron a reboot, quckily and easily move the preinstalled apps, change the TZ, and other things.
I'm not rooted. I'd like to be able to do nandroid-type backups and take screenshots, but I'm hoping Google will allow that for non-rooted users someday. GB has screenshot APIs that don't require root, but I don't see nonroot screenshot apps yet that use it.
If I really wanted root, I'd get a Google Nexus S phone with AOSP Android, instead of hacking a Carrier-subsidized phone running a Carrier-customized Android. Just my $0.02...
And Connectbot allows command-line access to unrooted users, but very restricted command set.
And what kind of Linux does Android run? No chmod, no more or less, no grep, no vi, common ls options are not available, ...

Apex, Liberty AOSP are based off .596 GB and are super fast and stable.
