For most ROMs, the instructions on flashing them include a step to wipe data.
It is best to always wipe cache, data, and Dalvik cache when flashing a ROM onto your phone. I have seen quite a few phones messed up because someone didn't do full wipe before flashing.

z4root gives you a temporary root. Unrevoked is a permanent (but undoable) solution that lets your phone remain rooted even after you cycle the power on and off.

Use unrevoked on your windows computer. Its really easy to use. Just follow the steps and you will be OK. Don't worry about hurting your phone. You can always start from scratch. Just remember to sync your contacts before you root your phone.
Unrevoked turns s-on to s-off. This way you can flash different radios. And do other amazing things to it.
