I have pdanet installed on my Droid, is it possible to set up and network and tether that way? Or even a ad-hoc connection?

PDANet will allow you to use wired (USB) tethering if you are running the windows PDANet client. You can also tether via bluetooth DUN. Wifi tethering cannot be done without a rooted phone and custom kernel.
The custom kernel isn't finished yet. Be patient. Motorola released their sources less than two weeks ago and its only been a couple weeks since we've had root. Modifying a linux kernel, making it stable, and creating a package that doesn't leave us all with paper weights isn't an overnight task...
just on a side note: I have a myfi card from verizon, it downloads around 700kb and up 350kb. With pdanet, i am d/l at 2350kd and up 775kb, that's an amzing difference, one i wasn't expecting...
I was able to game on Xbox Live using PdaNet!

i did it on sprint with my mogul. I had in dash monitor in car a 120volt inverter to power my xbox360 and my laptop. I then plugged my mogul into its charger as wifi is a battery hog, then i wifi tether to the laptop and setup internet connection sharing on my laptop and connected ethernet to the 360....Voila xbox360 mobile in my car/rig

Some, but when I was playing TF2 on my PC, there was no lag at all. 25 ping and I even had Ventrilo running.
I don't suggest doing this a lot, though, as it may become obvious that you are tethering.
