I have a chevy 1.25 Ghz kernel installed but my phone still won't allow me to set it past 550 Mhz. Does anyone know why. In the program SetCPU it even says I am running the kernel.

A lot of droids can't handle that kernel. Try 1200 (1100 lv is what I use) and see if that works. Good luck!!
your phone might not be able to handle it, try using something smaller perhaps just 1 ghz
Did you autodetect the settings in SetCPU? Press menu > device selection > autodetect.
Does SetCPU have root permissions? I know semi-recently that there have been people having trouble with SetCPU and Superuser Permissions app playing well with each other. Go into the SU app, and clear out SetCPU. Then go back into SetCPU and try again.
Beyond that, if you are on Froyo even the stock kernel should hit 800mhz.
