Overclocking question?

I got a certifired like new droid in the mail and it has the lastet 2.1 on it. I followed this "Rooting the ESE81/2.1 stock phone" guide. I installed recovery, busybox and the latest SU.

I want to Overclock now. Can I just flash any OC kernel, like Chevy's for example? Or do I have to flash the "flash_image" file to overclock since I'm not using a rom?

EDIT: I think I need to flash an .img file or something, not sure. I want to stay stock as possible that's why I'm staying away from any roms right now.
