Replace stock launcher.apk?

Hey guys. Long time lurker, first time poster. Loving the android OS. Switched over from Blackberry. So much faster!

So anyway, here's my question:

I have a Droid, running a custom, slightly stripped down (no Helix, removed a couple other apps, added a few. The usual. Will share on request.) version of Cyanogenmod reflashed with SPRecovery. I really don't like the slowness of running two launchers at the same time. Seems to lag my phone, even with an empty stock launcher.apk. So far, I've encountered three home apps: Helix, Launcher2 (stickied above) and the stock home app (launcher.apk).

Now here's what I want to know: Is there any way to remove the stock launcher.apk and run only launcher2.apk?

Any feedback is much appreciated.

Yes you can remove it from /system/app, but having more than one does not slow down your phone.

it does free up more space on the phone though

Well, now here's my problem. I can't figure out how to remove /system/app/launcher.apk without reflashing my ROM. I can't get ADB to work on my PC, and i've tried mounting the filesystem and using terminal emulator, but I just can't get it to work. Any other way to do it?
