    How would I remove a kernel?

    Installed BBv0.7 with chevy's 1ghz 5 slot.

    Now say it starts running hot and I don't want to be OC anymore, and want the old kernel that came with v0.7. How would I remove chevy's?

    Either use one of your previous backups and just update "boot" or get/use SetCPU from the Market, and set it back to stock clock speeds of 250/550.

    So just don't overclock it....you don't have to uninstall the kernal really. Set it to 600MHz max or choose the Droid instead of Autodetect.
