I have read people using one ROM and flashing someone else's kernel.
I am curious how this is done.
So far I've read you flash just the BOOT from the update or nandroid.
Is this true?

Great guide here
Overclocking the Droid | Root Your Droid
He's using one of chevy's older kernels, but can easily use that with anyones by exctracting the boot.img from their ROM.
Wifi tether requires another patch from the ROM as well though, you'll need the tiwlan_drv.ko located in /system/lib/modules/
The kernel and tiwlan must be from the same rom, they are compiled to work together specifically.

I'm rooted and such, I guess I'm apprehensive because I don't understand all the different pieces involved well enough.
I don't completely understand what the kernel is opposed to the ROM. :|

Try reading this guide ([How To] Easily install Bugless Beast using only SPRecovery, Terminal Emulator, & zip). It steps you through rooting and flashing/installing a ROM. Step 43 takes you through adding a kernel to the rom.

I get that's what I'm, supposed to do, but I don't know how to pull just the kernel.
A lot of people are using SG 5.0 with Chevy's kernel.
I've been running SG 5.0 and I want to attempt to apply Chevy's kernel to it, like these over people have tried.
I thought Chevy's was a full ROM, so how would I pull just the kernel out?

open the ROM and the kernel is the boot.img file.
That is all you need, unless you use wifi tether.
