I keep seeing ROMs with "everything deodexed" and I can't seem to find what that means. Whats the benefit of doing it? Whats the point?

Apk files have respective odexes that devs use to supposedly save space. Deodexing means you convert it back to a .dex file and put it back inside the apk. This allows you to easily replace files (not having to worry about odexes), but the main point was to deodex services.jar so that you can change all text to different colors (such as the clock color to white) and to deodex services.jar, you need to deodex everything.

I see, thanks
I've seen people say deoxed phones how do you do that?
Just wanting to verify, I'm on a stock 2.0.1 rom. In droid root helper it includes optional installs such as whiteclock notification for 2.0.1 deodexed roms only. So since I'm on stock 2.0.1 everything is odexed, I would not be able to install whiteclock notification through drh?
Correct. It will not work unless you are deodexed.
so it seems droidmod 1.0 is not deodexed..... I have tried changing the clock color and xultimate says my phone is not deodexed
Woody...........ah im goin to joggle my whittling knife in ya....
