Questions on rooting and choosing a ROM - Droid 1

Ok, I tried, I really tried and for whatever reason, I couldn't find the right post for getting through rooting and flashing a new ROM for the Droid 1 for a newbie. Please no hate, but if a thread that answers my question is out there please point me in that direction and please take it easy on me with your frustrations.

I'm tired of the lag I get on my Droid 1 when I try to return to the home screen after closing an app so I did some searching on the boards for an answer. I found a great start with this thread Droid homescreen lag and overall lag and found what I felt to be great directions for rooting in this one Root Droid 1 - regardless of OS version. Where I seem to be stuck is, how do I flash a ROM? I consider myself a very technically adept person and should have no problem going through the process, but I'm just coming up confused. I almost decided to take the plunge with Project Elite, but I couldn't find instructions that didn't leave me with any doubt. Things like, "YOU MUST wipe your dalvik cache" and all these, "You MUSTS" make me wary.

Is installing/flashing a new ROM as difficult as some posts make it seem? For some reason, I feel like I'm missing something that's right in front of my face and I'm making it to difficult. Thanks for any help and I apologize if I'm asking something that's been answered over and over and I'm just missing it.
