If this is your first time, pick a few different ones and load them to your sd. That way if you boot loop, just boot to recovery and flash a different one. This saves time backing up from a boot loop. (you should have already made a backup of your new rom) If you do boot loop, go down in frequency or up in voltage. Since all droids are different, your not going to know what kernel works for your phone until you tried them. You could probably find some suggestions for kernels from the section you got your rom from.

Now that you're rooted I suggest trying several roms. Every rom works slightly different on each Droid and same with Kernels. The best roms for me have been Simply Stunning (Froyo and GB), Project Elite (Froyo and GB), as well as the old school Lithium Mod. But there are several great roms out there, just look around this site.

I don't know the exact terminology for what kernels do, I just know that they basically govern the speed of your phone. For example, a stock droid with the stock kernel can only be overclocked to 600mhz I believe. If you install, for example, a 1ghz kernel you can then overclock your phone much higher therefore your phone runs faster. Here are Chevyno1's kernels-

Always make a backup before installing roms or kernels!!!

You can use SetCPU or Droid Overclock to overclock your device, or some roms have this feature built in!

You can use rom manager for both, but I suggest you don't. RM has issues.

To back up a rom, assuming you are using clockwork recovery, boot into recovery, select nandroid, then backup. It will save it to the sd in clockwork/backup. Then reboot. (unless you have a rom on your sd ready to flash. If so dont reboot, just wipe and flash your rom)

To flash a rom, download it to a pc then transfer it to your sd. Boot into recovery and do a wipe. Then go to partitions and format the boot and system. Then go to advanced and wipe the dalvik cache. Then install rom from sd. Give it time to load and enjoy your new rom.

When you flash a kernel, you don't need to wipe.
