Take a look in the Hacks section, but in short.
1. Theoretically yes, but you can always restore the latest official release and Verizon will be none the wiser.
2. Do you mean the official 2.1 update? Perhaps, but I am sure someone will find a way around it. They already have the unoffical 2.1 release working with root.
3. Not rooting, but installing a custom rom will. Contacts come back when you log back into gmail. You can backup and restore or re-download your apps.

Custom roms are often used as a shortcut to get a lot of the fun stuff installed all at once. They are also used to do a one time install of things that most people don't have the know-how or means to do themselves.
For instance, you could install a custom rom with the wifi tethering and 2.1 installed already instead of doing all of the steps piece by piece.
This is, of course, a simplified explanation.
