Which root should I choose and is there a how-to link (never rooted before)?
My main reason for rooting is to use the free wifi tethering for ipad and laptop use on the go.
...and once I root will I need to update?

First, why are you still at 2.1? 2.2 is where you should be.
Next please read some more about rooting, what it's about and what's all involved in it. It's easy to root but if you have no idea why you're doing it, then why are you doing it? It's not even necessary.

To answer your question Z4Root is the easiest way to go.
Go to work, send your kids to school, follow fashion, act normal, walk on the pavement, watch t.v., save for your old age, obey the law, don't ask questions, and repeat after me.....I am free.
I am not sure you can backup before rooting.

Just so you know they might DL as TXT files....just use Astro File Manager (free in market) and rename them to apk.

Once rooted and you have D2 Bootstrap installed you can run a backup....yes I know it says D2 but it works with the DX as well.

Question you need to answer:
Do you want to potentially ever return your phone to Verizon? If so, you should not be rooting.
If you say that you're fine never again being able to return this phone to Verizon, follow these directions:
- Permanently root using z4root (it may take up to 10 minutes - be patient)
- Immediately following that, install the bootstrap program
- After installing the program, open it and click "Bootstrap Recovery"
- After clicking that, it will ask you for su/admin permissions - tell it to remember and grant access
- Make sure that you get a "Success!" popup - sometimes you have to repeat the previous step a couple times before you're done
- After you get a "Success!" message, click on "Reboot Recovery" - your phone will reboot to a new menu that you've never seen before
- In this new menu, use your volume buttons to go up and down, and use your camera button as an "OK", and back to go back
- Select "backup and restore"
- Select "Backup"
- Wait for ~10 minutes while it backs up - once it's down, navigate the menu back to the first page and reboot the system
- At this point, most things you do to screw your phone up can be fixed by going back to this backup until you upgrade to a newer version of Android
