I don't know any technical details about what the uncap hack does (or if it even works). If it does work, I'm kinda surprised. And I bet it won't work for very long. At some point, VZW will realize it's dumb to rely on something on the handset to cap data speeds and they'll do it within their infrastructure (if they're not already doing that).
