Well I go on gmail and look at contacts, and it's all my contacts. Does this mean that I'll no longer have them and have to re-enter them after the account is removed? Or will I just not have them backed up to Google if anything were to happen?
They will still be associated with the Gmail account just not your Droid.

I want to take the gmail account off the droid and keep my contacts. I don't really want the gmail account at all actually.
