what update? just use the pete root method. already rooted and unrooted. toook 5 minutes max.
There is no race to beat the ota. Just Don't install the ota and you will be able to root anytime after an update notification.

There is already an OTA coming?
Jesus said: This is my commandment, That you love one another, as I have loved you. Greater love hath no man than this, that a man lay down his life for his friends. You are my friends, if you do whatsoever I command you.
John 15:12-14
There has been a rumor going around that an OTA update will close the exploit that allows rooting on the Bionic. I think you should just go ahead and root. If such an update exists you would be able to block it and even edit the files to indicate you have already received the update so it doesn't keep bugging you.
The article I linked had the rumor. Downloaded the root stuff. Thinking about rooting, though this thing is pretty sweet as is. What pros would come of rooting before custom ROMs available?

Will having removed app such as Blockbuster and the Vcast apps matter when an OTA update comes?

I wouldn't doubt that an OTA is headed to the Bionic...every other phone has had one literally I think.
