I've seen screen shots of droids that use mt and have custom named folders on their home screens. Can anyone tell me how to do this?

Try the simple text app, it is a little simpler. You create a custom icon with the app, save it to your card, long press the folder icon you want to replace, hit replace with custom icon and navigate to it.
