I go in to system/settings/applications/manage applications and uninstall one... after it completes uninstall, it will not complete 'loading'. I can get out of there pushing the back button. Kinda weird, eh?

do you have a lot of applications installed?
keep in mind, not every app in the market is checked to see that it completely works and doesn't harm your system.
If you don't have a lot of applications, then try wiping the data to factory and wiping cache and installing the rom over again.
I found that when I had a ton of applications (more than I could fit on my 5 home screens) the uninstall tab would take a while to load.

actually, I had been uninstalling items before using Advanced Task Manager, which I promptly removed today after finding out it was bad for my battery life.
I am experiencing the same issues, the pictures of the Apps will load, but the 'Loading' window does not go away. You can also press search and the 'Loading' window will go away, but you won't be backed out of the Uninstall tab.
