how do i do the /system wipe? i've never done that before..
format SYSTEM: is thru adb. as long as it is a 2.1 you should be ok to just run the update.zip to update the system then the tgz for the apps. make nandroid before hand just incase you have a problem. can always download 6.5 nandroid and then install 7.0 on top of that.

Ultimate Droid v7 Installation Instructions:
-Download Ultimate Droid v7.zip
-Extract files to root of sdcard
-Reboot into recovery
-Install
-Allow update.zip installation
-Install /sdcard/update.zip (deprecated)
-Wait for it to finish
-Select "Choose ROM from SD card" from the menu.
-Choose droidtest14.rom.tar
-Wait for Recovery to perform a backup and decompress customizer...
-Follow the installation instructions and choose your preferred options.
-When it tells you that you are finished... you're done.
-Reboot and enjoy.

recommend a wipe, then install nandroid from 6.5 to get you on a 2.1 based rom first.

its correct, there is an update.zip and tgz file in the update you can download
