Theming Apps

Can someone direct me to a link on how to theme the applications? I love the Incognito theme that I am using right now and I hate that every time I want to update any of the google apps I have to give up my themed app to do it. I know the developer is very busy and can't possibly keep up with all changes as they are released but figured I could help myself and see if I could do it on my own as it is just something that bugs me and takes away form the theme as a whole. Any help would be much appreciated, and thanks in advance to those who respond
