The app "quickpic" will allow you to hide pics and videos - it is a gallery replacement app.

Using Astro or some other file manager you could rename the folder they are in to something beginning with a "." (ex .pics) and the gallery wont pick them up. Or you could place a ".nomedia" file in the folder as well. If you use either one of these methods the only way you would be able to see them is using a file manager.
Try, "Gallery lock" in the market. Download it, and hide pictures and videos.

i use "Photo Vault" app to hide pictures
Vaulty works for me ;-) It requires a password and its FREE!

I use Hide It Pro aka...Audio Manager. It's also free and the app itself is disguised as a working audio managing app. Not only does it have a password to get into the app it also has a second emergency password. If you enter the one PW from the home screen you get taken to the vault. If you enter the other PW from the home screen you get taken to an empty copy of the vault. That's for a decoy in case someone finds out about the app and wants to see what is hidden in the vault. Not to mention you can also lock apps. And if you're rooted you can hide apps. It's really a first class vault. Keep in mind that all of the vault apps can be found and the files seen by using a file manager. So this app can lock the file managing app so your hidden files stay secure.
