I'm looking for something with a few extra features, like tethering, but keeps the base look and functionality of stock. I have a Moto Droid. Any recommendations?

If you are only interested in tethering and don't want overclocking, you could go with a stock ESE81 ROM. The ability to tether is determined by the kernel and not the ROM. Prior to the introduction of an app called Barnacle, you needed a modified kernel to WiFi tether. Now Barnacle enables the user to WiFi tether with a stock kernel and rooted stock ROM.If you want something more than tethering, IMO, the most stable ese81 is the latest Cyanogen Mod.
pete has a stock 2.1 with root, just apply a kernel you want now you got thethering, then do what you want with it. heres the link.

Cyanogen is pretty nice and looks clean.
ROM Manager + Cyanogen 5.0.6.2 + Home from ROM Manager>Download ROM = Heaven.
Fast, WiFi tether accepted, and you get the coolest (in my opinion) rounded notification bar. It has a nice feel to it.
Might I add, if you are using ANY custom ROM, and are a n00bcake, ROM Manager is the easiest way to do anything. Just be rooted and it is all straightforward, there is even a rooted stock 2.1 on there if you go to stock images when you download.

DX
The Cyanogen rom looks pretty good - I'll try that.
I just rooted my Droid from stock 2.1 using these instructions.
How-To Root your stock 2.1 Droid
It was rather long, but it works now. I have SPRecovery on it since that was in the instructions.
Based on that, what steps do I need to do to get Cyanogen on the "correct" way from here?
Thanks everyone so far.
Edit: Nevermind. Got it loaded with ROM manager. Everything looks good and is running fine!
