    How do I change the name from "me" in my outgoing texts to the name I want to use? Thanks

    It doesn't show that to the other person. That's just on your side.

    You can't. The only identifier that goes out is your number. Whatever the person has on the other end for your contact entry is what appears. It's not like email where you have headers that specify this sort of information.
