Is it possible to add my work account through Exchange 2010 without having to use a password on my Droid each time I unlock it?

If by password you mean an unlock screen password, then yes. I connect to my work's exchange 2010 and do not have a password set on my lock screen. It works perfectly fine.

One thing to note: If you are running a custom ROM, make sure that the ROM you are running supports exchange. Not all of them do.

Use an app like Touchdown where the security policies apply to the app instead of the device.

Neither do but my Exchange security policies don't require it. What works for you isn't relevant if your Exchange security policies are different than the OP's.
