Viewing Email, Viewing Apps

I have a wee dilemma:

When I view the 100s of emails I receive, I'd like to be able to view them by sender or subject but cannot figure out how to set it that way.

With my old blackberry, I simply had to press and hold and all email from that person appeared. Can someone help me with a quick shortcut?
