The OP is a self described newbie, it is not advisable for him to root at this point in my opinion.
Not only that, but root isn't required at all for great apps. Especially for a new user.
OP, search around the forum, there are hundred of Must Have Apps threads with tons of great suggestions.

For non-rooted phone, my list would be:
*aCar - mileage and expense tracker
*FolderOrganizer - to much to explain, but GREAT app
*LauncherPro (or some other non-stock launcher)
*Beautiful Widgets - Great clock, calendar and weather widget
*Pure Calendar - great calendar widget
*SwitchPro - customizable power-widget
*WidgetLocker - customize the lock screen with widgets (and remove sliders)
*xScope - GREAT browser
*DroidForums app - Free Tapatalk for this forum
*TouchDown - IF you use exchange server email
*SugarSync - similar to DropBox but better (you can choose any folder(s), better interface, smaller footprint on your desktop, PM me if you want an invite for more storage).
Those are the non-root apps that I use almost daily.
Two great system monitoring apps (again non-root)
*mini-info - provides various system data
*Watchdog - keeps an eye on apps and warns of run-away CPU hogs (not really needed for advanced users but if you're just starting it's a good way to keep an eye on some of the frivolous apps you'll likely try and figure out which ones are poorly written ie. resource/battery hogs)
